Quick Nigerian Okra Soup Recipe
What you will need:
2 16oz bags chopped frozen okra
1 12 oz bag frozen spinach
1lb chopped beef
1 lb jumbo shrimp
2 cups stock fish bits
1 large red onion
1/2 cup ground crayfish
2 cups tomato purée fresh or canned (10.7oz or 305g)
1/2 cup palm oil
2-3 tablespoons Nigerian red pepper or cayenne pepper
1-2 tablespoons Cameroon pepper(optional)
1-2 tablespoons ground dawadawa/locust bean (traditional Maggie)
Salt to taste
Curry and garlic powder to season meat(optional)
Steps:
1. Chop onions
2. Cook and season all your meat separately, then set aside
- To cook stock fish bits simply add water, boil for 30 mins or until soft. Do not throw stock away.
- To cook beef add water to cover about half of meat add 1/2 chopped onion season with salt, pepper, and garlic powder to your desired taste. Boil about 30 mins or until tender. Do not throw away stock.
- To cook shrimp sauté in a little bit of oil. Season with salt, pepper, garlic powder and curry powder.
4. Heat up 1/4 cup palm oil into pot
5. Saute half chopped onion in oil
6. Add tomato puree into oil
7. Fry and stir tomato frequently for about 10mins
8. Add pepper and crayfish to tomatoes stir and continue frying for about 5 more minutes
9. Add about 2 cups of stock, meat, and fish to tomatoes
10. Stir and allow to boil for about 10mins
11. Add okra to pot, stir and allow to boil about 10 mins
12. Add shrimp and spinach stir and allow to boil for 10 mins
13. Add salt to taste, and enjoy!
To note, I don't actually measure my food and seasoning, so these are approximate measurements. I cook based off the taste and look of my food. I also typically use fresh tomatoes that I have blended and boiled down previously for this recipe as opposed to using canned tomato puree. But hope you enjoy.
